Gia, the host at the door

Books the table, never guesses an allergen

Gia is Limone Trattoria’s online host. She books tables straight from the reservations book, inside, on the terrace or at the pasta-bar counter, and when a time is full she offers the nearest real alternatives or the waitlist instead of a squeeze. Allergy questions are answered only from the kitchen’s allergen matrix, cross-contact included, and anything the matrix cannot answer goes to the kitchen; groups over eight go to the events team with the private-dining pack.

Ciao! I’m Gia, Limone’s host. I can find you a table, walk you through the menu, or check allergens against the kitchen’s matrix. What can I do for you?

What Gia does for Limone Trattoria

Front of house, as far as a website can do it: the table, the menu, the allergy questions and the big parties, each answered from the restaurant’s own records.

  • Nº 1 Tables

Only tables that are really free

Gia books straight from the reservations book: inside, on the covered terrace or at the pasta-bar counter. When a time is full she offers the nearest free times within two hours and the waitlist, and the book re-checks the table as it writes, so nothing is squeezed in.

  • Nº 2 Allergens

All fourteen allergens, from the matrix

Every allergen answer is read from the kitchen’s matrix: the UK’s 14 allergens for every dish, plus what the shared fryer and the dessert station pass on. Gia never calls a dish safe or nut-free. She says what the matrix says, and that the kitchen can’t guarantee it.

  • Nº 3 The kitchen

What the matrix can’t answer goes to the chef

Garlic, chilli, an off-menu dish: there is no row for them, so Gia says she can’t confirm it rather than guess, and puts the question on the guest’s booking for the kitchen to answer.

  • Nº 4 The menu

The menu, filtered for the guest

Vegan, vegetarian or pescatarian, or without any of the fourteen: the menu is filtered from the same matrix. Dishes that share the fryer or the dessert station are marked, or left out altogether for a severe allergy.

  • Nº 5 The booking

    Allergies travel with the booking

An allergy goes on the booking with its severity and prints on every kitchen ticket for that table. For a severe one, Gia can ask the head chef to ring the guest before they come in. She finds the booking by its reference, or by name with the mobile it was made with, never by a surname and a date alone.

  • Nº 6 Private dining

Big tables go to the events team

Online tables stop at eight. For a bigger party Gia emails the La Terrazza pack (set menus, deposit terms) and hands the enquiry to the events manager with everything the guest said. She never holds the room or takes a deposit.

The rules she keeps

Whatever a guest says. The hard limits (the allergen matrix, the table plan, eight guests online) are written into the systems she calls, so no conversation can talk its way past them, and there is simply no tool for a discount or a deposit.

  1. Allergen answers come only from your allergen matrix, never from what a dish usually contains. Every answer says whether the shared fryer and the dessert station can pass the allergen on, and Gia never calls a dish safe or promises nut-free.

  2. Anything the matrix does not cover, such as an ingredient outside the UK 14 or a dish that is not on the menu, goes to the kitchen as a question on the booking. Gia does not guess, and never answers for the nearest dish instead.

  3. She books only tables the reservations book shows free, up to eight guests online. When a time is full she offers the nearest real alternatives or the waitlist, and never squeezes in an extra table.

  4. Groups over eight go to your events team with the private-dining pack. Gia never confirms La Terrazza or takes a deposit herself.

  5. She never asks for card details, and never promises a free dessert, a particular table or a discount.

Inside the demo

Limone’s homepage with Gia’s chat open on it, and a Behind the scenes panel showing every check she makes and every record she changes. Three conversations, each one click from here, and every table, allergen answer and reference in them comes from Limone’s own reservations book, menu and allergen matrix.

Watch forIn the tree-nut conversation, watch Gia decline to call anything nut-free: she reads the allergen matrix, flags the shared fryer and the dessert station, says plainly that the kitchen cannot guarantee it, and puts a severe-allergy flag on the booking with a call from the chef instead of a reassurance.

  1. 01

    Table for 4, Saturday 8pm

“Hi! Could I get a table for 4 this Saturday at 8pm?”

8pm is full, so Gia offers the two nearest real tables and the waitlist, books 7:15 inside and notes the birthday.

  2. 02

    Severe tree-nut allergy

“My son has a severe tree-nut allergy and carries an adrenaline pen. We’re booked in for Friday. What can he eat?”

Gia answers only from the allergen matrix, flags the shared fryer and dessert station, says plainly the kitchen can’t guarantee nut-free, and flags the booking for the chef.

  3. 03

    Birthday for 18

“I’m planning my partner’s 40th: 18 of us on Saturday 31 October, around 7:30. Can you book it?”

Eighteen is over the online limit, so Gia explains La Terrazza, emails the private-dining pack and hands the enquiry to the events manager with every detail.
